Clean the mushrooms with a damp paper towel or quick rinse, then dry them well
Trim off any tough stem ends
Place the mushrooms on a cutting board
Slice them lengthwise into even pieces
Stack or line up the slices
Cut across the slices to make smaller pieces
For a fine chop, continue cutting until the pieces are the desired size
Keep your fingers tucked in while cutting
Use a sharp knife for cleaner cuts
Chop only as much as needed for the recipe
