Pat the lamb leg steaks dry
Season both sides with salt and black pepper
Add garlic, rosemary, thyme, or other preferred seasonings
Let the steaks rest at room temperature for 15 to 20 minutes
Heat a skillet, grill pan, or outdoor grill over medium-high heat
Add a little oil if using a skillet or grill pan
Cook the steaks for 3 to 5 minutes per side for medium-rare, depending on thickness
Cook longer for a more done result
Use a meat thermometer if desired
Remove from heat when the internal temperature reaches your preferred doneness
Rest the steaks for 5 to 10 minutes before serving
Slice and serve immediately
