Preheat the Blackstone to high heat for 10 to 15 minutes
Pat the steak dry with paper towels
Season both sides with salt and pepper or your preferred steak seasoning
Lightly oil the griddle surface
Place the steak on the hot griddle
Sear the first side for 2 to 4 minutes
Flip the steak and sear the other side for 2 to 4 minutes
Sear the edges briefly if needed
Reduce heat if the steak is browning too fast
Cook until the steak reaches your desired internal temperature
Remove the steak from the griddle
Rest the steak for 5 to 10 minutes before slicing
Slice against the grain and serve
