1 cup cornmeal
1/2 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1 egg
2 tablespoons melted butter or oil
1/4 cup water, if needed
1/4 to 1/2 cup oil or shortening for frying
Mix cornmeal, flour, sugar, baking powder, and salt in a bowl
Whisk buttermilk, egg, and melted butter or oil in another bowl
Combine wet and dry ingredients
Add water if batter is too thick
Heat oil or shortening in a skillet over medium heat
Drop batter into the hot skillet by spoonfuls
Flatten slightly with the back of the spoon
Fry until golden brown on one side
Flip and fry until golden brown on the other side
Drain on paper towels
Serve warm
