Rinse the chicken gizzards under cold water
Trim away any excess fat, gristle, or tough membrane
Optional: soak in salted water for 15 to 30 minutes
Place the gizzards in a pot and cover with water or broth
Add salt and any desired seasonings
Bring to a boil
Reduce to a simmer
Cook until tender, about 1.5 to 2.5 hours
Drain the gizzards
Slice or leave whole
Heat oil or butter in a skillet
Add onions, garlic, or other seasonings if desired
Add the cooked gizzards
Fry until browned and heated through
Serve hot
