Pat filet mignon dry
Season generously with salt and black pepper
Let steaks sit at room temperature for 20 to 30 minutes
Preheat grill to high heat
Clean and oil the grill grates
Place steaks on the hottest part of the grill
Grill for 4 to 5 minutes per side for medium-rare, depending on thickness
Use tongs to flip once
Check internal temperature with a meat thermometer
Remove at 125°F for rare
Remove at 130°F to 135°F for medium-rare
Remove at 140°F for medium
Rest steaks for 5 to 10 minutes
Slice and serve immediately
