Rinse 1 cup of rice
Add 4 cups of water to a pot
Add the rice and 1 cinnamon stick
Bring to a boil
Reduce heat and simmer until the water is mostly absorbed
Add 4 cups of milk
Add 1 cup of sugar
Add 1 teaspoon of vanilla extract
Add a pinch of salt
Stir frequently over low heat
Cook until thick and creamy
Remove the cinnamon stick
Serve warm or chilled
Sprinkle with ground cinnamon if desired
