How To Make Dijon Mustard?

1/2 cup yellow mustard seeds

1/2 cup white wine

1/4 cup white wine vinegar

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground turmeric

1 tablespoon honey or sugar

1 tablespoon water, as needed

Combine mustard seeds, white wine, vinegar, onion, garlic, salt, pepper, turmeric, and honey in a bowl

Cover and let sit for 24 to 48 hours

Transfer mixture to a blender or food processor

Blend until smooth or desired texture is reached

Add water a little at a time if needed

Taste and adjust salt, sweetness, or vinegar

Store in a sealed jar in the refrigerator for at least 1 day before using
