Rinse the catfish fillets and pat them dry
Season with salt, pepper, and any preferred spices
Dredge in cornmeal, flour, or a breadcrumb mixture
Heat oil in a skillet over medium-high heat
Place the catfish in the hot oil
Cook for 3 to 5 minutes per side until golden brown
Check that the fish flakes easily with a fork
Remove from the skillet and drain on paper towels
Serve immediately with desired sides or sauce
