Wash basil leaves gently and pat them completely dry
Remove stems and discard any damaged leaves
Freeze whole leaves in a single layer on a baking sheet
Place the baking sheet in the freezer until the leaves are firm
Transfer the frozen leaves to an airtight freezer bag or container
Remove as much air as possible before sealing
Label the container with the date
Store in the freezer and use within several months
For chopped basil, mix leaves with a little water or olive oil and freeze in ice cube trays
Once frozen, move the cubes to a freezer bag or container
