Rinse the black-eyed beans under cold water
Soak them in water for 6 to 8 hours or overnight
Drain and rinse the soaked beans
Add the beans to a pot with fresh water
Bring to a boil
Reduce heat and simmer until tender, about 30 to 45 minutes
Skim off any foam if needed
Add salt near the end of cooking
Drain the beans if needed
Use in your desired recipe or serve as is
