Preheat the oven to 350°F
Crumble cornbread into a large bowl
Add cubed bread if desired
Melt butter in a skillet
Sauté chopped onion and celery in the butter until softened
Add cooked sausage if desired
Stir in salt, black pepper, sage, thyme, and parsley
Add the sautéed mixture to the cornbread
Mix in beaten eggs
Pour in chicken broth gradually until moistened
Add chopped cooked turkey giblets or other mix-ins if desired
Transfer the mixture to a greased baking dish
Cover with foil
Bake for 30 minutes
Uncover and bake for 15 to 20 minutes more until golden on top
Let rest before serving
