How To Make A Sourdough Starter From Scratch?

Mix equal parts flour and water in a clean jar

Use about 50 g flour and 50 g water to start

Stir until no dry flour remains

Cover loosely with a lid or cloth

Leave at room temperature for 24 hours

Discard about half of the mixture

Feed with equal parts flour and water again

Stir well after each feeding

Repeat discarding and feeding every 24 hours

Use warm room temperature if possible

Switch to twice-daily feedings if it becomes very active

Continue until it doubles in size within 4 to 8 hours after feeding

Look for bubbles, a tangy smell, and a light airy texture

Keep feeding until the starter is strong and predictable

Store in the refrigerator once established

Feed before baking to wake it up and strengthen it
