Preheat the oven to 425°F
Pat the tenderloin roast dry
Trim any excess fat or silver skin
Season all sides generously with salt and pepper
Optional: rub with garlic, herbs, and oil
Place the roast on a rack in a roasting pan
Insert a meat thermometer into the thickest part
Roast for 20 to 30 minutes, or until browned
Reduce the oven temperature to 350°F
Continue roasting until the internal temperature reaches 125°F to 130°F for medium-rare or 135°F to 140°F for medium
Remove the roast from the oven
Tent loosely with foil
Rest for 15 to 20 minutes
Slice against the grain
Serve immediately
