Harvest oregano stems in the morning after the dew has dried
Rinse gently if needed and pat completely dry
Remove any damaged or yellow leaves
Tie stems into small bundles
Hang bundles upside down in a warm, dry, dark, well-ventilated place
Leave until leaves are crisp and brittle
Strip the dried leaves from the stems
Crumble the leaves if desired
Store in an airtight container away from heat and light
Label the container with the drying date
