How To Make Sofrito?

Gather onions, bell peppers, garlic, tomatoes, cilantro, olive oil, salt, and optional ají dulce or culantro

Wash and chop the vegetables and herbs

Heat olive oil in a pan over medium heat

Add onions and bell peppers

Cook until softened

Add garlic and cook briefly

Add tomatoes and herbs

Add salt

Cook until the mixture is soft and fragrant

Blend or pulse to desired texture, if desired

Use immediately or store in a sealed container in the refrigerator
