How To Cook A Boneless Rib Roast?

Preheat the oven to 450°F

Pat the boneless rib roast dry

Season all sides generously with salt and pepper

Optional: rub with garlic, rosemary, thyme, and olive oil

Place the roast fat side up on a rack in a roasting pan

Insert a meat thermometer into the thickest part of the roast

Roast at 450°F for 15 minutes

Reduce oven temperature to 325°F

Continue roasting until desired internal temperature is reached

Remove at 120°F to 125°F for rare

Remove at 130°F to 135°F for medium-rare

Remove at 140°F to 145°F for medium

Tent loosely with foil

Let rest for 20 to 30 minutes

Slice against the grain and serve
