Pat lamb chops dry with paper towels
Season both sides with salt and black pepper
Add oil to a skillet and heat over medium-high heat
Place lamb chops in the hot skillet
Cook without moving for 3 to 4 minutes
Flip and cook the other side for 3 to 4 minutes
Add butter, garlic, and herbs if desired
Spoon melted butter over the chops while cooking
Cook until desired doneness is reached
Remove lamb chops from the skillet
Rest for 5 minutes before serving
