Wash and peel sweet potatoes (optional).
Cut into evenly sized chunks (about 1–2 inches).
Place in a pot and add enough cold water to cover.
Add a pinch of salt (optional).
Bring to a boil over high heat.
Reduce to a gentle boil and cook until tender when pierced with a fork (about 15–25 minutes, depending on size).
Drain in a colander.
Let steam off briefly, then serve or mash.
