Let the griddle cool slightly, then wipe off loose debris with a paper towel or scraper
While warm (not hot), scrape stuck-on food with a griddle scraper
Pour a small amount of water onto the surface to loosen residue, then wipe with a paper towel
Repeat scraping and wiping until the surface is clean
If residue remains, scrub with a nylon brush or non-scratch pad using warm water and a small amount of mild dish soap
Rinse by wiping with a clean, damp cloth or paper towel
Dry thoroughly with paper towels
Apply a thin, even layer of cooking oil over the entire surface
Heat the griddle on medium-high for 2–5 minutes until the oil smokes lightly, then wipe off excess oil
For rust spots: scrub with a griddle stone or fine steel wool (if needed), rinse/wipe clean, dry completely, then re-season with a thin oil layer and heat until lightly smoking
