Preheat the oven to 350°F
Bake or boil 2 to 3 medium sweet potatoes until tender
Peel the sweet potatoes
Mash the sweet potatoes until smooth
In a large bowl, combine 2 cups mashed sweet potatoes, 1 cup sugar, 1/2 cup melted butter, 2 eggs, 1 cup evaporated milk, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon salt
Mix until smooth and well combined
Pour the filling into an unbaked 9-inch pie crust
Smooth the top with a spatula
Bake for 50 to 60 minutes, until the center is set
Remove from the oven and let cool completely
Slice and serve
