Keep tomatoes in direct sunlight
Cover with fine mesh or cheesecloth to protect from insects
Bring tomatoes indoors at night
Turn tomatoes daily for even drying
Continue drying until leathery and no moisture remains
Store dried tomatoes in an airtight container
Keep stored tomatoes in a cool, dark place
