How To Blanch Broccoli?

Bring a large pot of water to a boil

Add 1–2 tsp salt per quart (optional)

Prepare a bowl of ice water

Cut broccoli into bite-size florets

When water is boiling, add broccoli

Blanch for 2 minutes (small florets) to 3 minutes (larger florets)

Immediately transfer broccoli to the ice water

Cool for 2–3 minutes

Drain well

Use immediately, or pat dry and refrigerate, or freeze after drying
