Cook and cool rice ahead of time
Heat oil in a pan or wok
Add chopped onion and garlic
Add vegetables and cook until tender
Push ingredients to one side
Add beaten eggs and scramble
Add cooked rice
Break up clumps and stir well
Add soy sauce, salt, and pepper
Add cooked meat or shrimp if desired
Stir-fry until everything is hot
Garnish with chopped green onions if desired
