Preheat the oven to 300°F
Pat the pork butt dry
Season all sides with salt, pepper, and any desired dry rub
Place the pork butt in a roasting pan or Dutch oven fat side up
Add a small amount of liquid to the pan if desired
Cover tightly with a lid or foil
Roast until the internal temperature reaches 195°F to 205°F
Check for tenderness with a fork; it should shred easily
Remove from the oven and let rest for 20 to 30 minutes
Shred or slice the pork butt
Serve as desired
