How To Cook A Ribeye Roast?

Preheat oven to 450°F

Pat ribeye roast dry

Season generously with salt and pepper

Rub with garlic, herbs, and oil if desired

Place roast fat side up on a rack in a roasting pan

Insert a meat thermometer into the thickest part

Roast at 450°F for 15 minutes

Reduce oven temperature to 325°F

Continue roasting until desired internal temperature is reached

Remove from oven at 120°F to 125°F for rare

Remove from oven at 130°F to 135°F for medium-rare

Remove from oven at 140°F to 145°F for medium

Tent loosely with foil

Rest for 20 to 30 minutes

Slice against the grain

Serve immediately
