Heat oil in a large oven-safe pan over medium-high heat
Sear the roast on all sides until browned
Add onions, carrots, and potatoes if desired
Place the pan in the oven
Roast until the internal temperature reaches the desired doneness
Remove the roast from the oven
Let the roast rest for 15 to 20 minutes
Slice against the grain and serve
