Pat the whole chicken dry
Remove giblets from the cavity
Season the chicken with salt, pepper, and any desired spices
Place chopped onions, carrots, or potatoes in the bottom of the slow cooker if desired
Put the chicken breast-side up in the slow cooker
Add a little broth or water if desired, but do not submerge the chicken
Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours
Check that the thickest part of the chicken reaches 165°F
Remove the chicken carefully from the slow cooker
Let the chicken rest for 10 to 15 minutes before carving
Carve and serve
