Pat chicken breasts or thighs dry
Season with salt and pepper
Optional: add garlic powder, onion powder, paprika, or herbs
Heat a skillet over medium heat with a little oil
Cook chicken 5 to 7 minutes per side until golden and fully cooked
Check that the internal temperature reaches 165°F
Transfer to a plate and rest for 5 to 10 minutes
Slice or shred the chicken
Add to salad after cooling slightly
