Clean the chicken paws thoroughly
Trim the nails and remove any rough skin
Blanch the paws in boiling water for 3 to 5 minutes
Drain and rinse with cold water
Marinate with salt, pepper, garlic, soy sauce, and optional spices
Heat oil in a pan or wok
Fry or sauté the chicken paws until lightly browned
Add water or broth
Simmer until tender, about 30 to 45 minutes
Add sauce ingredients such as soy sauce, oyster sauce, sugar, and chili if desired
Cook until the sauce thickens and coats the paws
Serve hot
