Cut the squash in half lengthwise
Scoop out the seeds
Slice into half-moons or cubes
Toss with oil, salt, and pepper
Spread on a baking sheet in a single layer
Roast for 20 to 25 minutes, flipping halfway through
Cook until tender and lightly browned
