Crack eggs into a bowl
Add a splash of milk, cream, or water if desired
Whisk vigorously until fully combined and slightly frothy
Heat a nonstick pan over low to medium-low heat
Add butter or oil and let it melt
Pour in the eggs
Let the eggs sit briefly, then gently stir with a spatula
Stir slowly and continuously, scraping the bottom and sides
Remove from heat while the eggs are still slightly soft
Season with salt and pepper
Serve immediately
