Sort and rinse the kidney beans
Soak the beans in plenty of water for 8 to 12 hours
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water
Bring the water to a boil
Boil the beans hard for at least 10 minutes
Reduce the heat and simmer until tender, about 45 to 90 minutes
Add more water if needed to keep the beans covered
Check for doneness by tasting a bean
Drain the cooked beans
Season and use as desired
