Wash the potatoes
Peel the potatoes if desired
Cut the potatoes into even chunks
Place the potatoes in a pot and cover with cold water
Add salt to the water
Bring the water to a boil
Cook until the potatoes are tender but not falling apart
Drain the potatoes
Let the potatoes cool slightly
Mix mayonnaise, mustard, salt, and pepper in a bowl
Add chopped celery, onion, and pickles if desired
Add the potatoes to the dressing
Gently toss to coat
Add chopped hard-boiled eggs if desired
Chill the potato salad before serving
Taste and adjust seasoning before serving
