Pat the roast dry and season it with salt, pepper, and any desired spices
Heat oil in a skillet and brown the roast on all sides, if desired
Place sliced onions, carrots, and potatoes in the bottom of the crock pot, if using
Put the roast on top of the vegetables
Add beef broth, water, or a cooking sauce around the roast
Add garlic, onion soup mix, herbs, or other seasonings
Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours
Check that the roast is tender and reaches a safe internal temperature
Remove the roast and let it rest for 10 to 15 minutes
Slice or shred the roast and serve with the vegetables and cooking juices
