Prepare the dough with all-purpose flour, salt, oil, and water
Knead the dough until smooth and firm
Cover the dough and let it rest
Boil or steam potatoes and peas for the filling
Mash the potatoes lightly
Heat oil in a pan
Add cumin seeds, ginger, green chilies, and spices
Add the potatoes and peas
Mix well and cook the filling
Add coriander leaves and let the filling cool
Divide the dough into equal portions
Roll each portion into a thin oval or circle
Cut each piece in half
Form each half into a cone
Fill the cone with the potato mixture
Seal the edges with water or flour paste
Shape the samosa neatly
Heat oil in a deep pan
Fry the samosas on low to medium heat
Turn them until golden brown and crisp
Remove and drain on paper towels
Serve hot with chutney or sauce
