How To Cook Sushi Rice?

Rinse 1 cup sushi rice in cold water until the water is mostly clear

Drain well

Cook the rice with 1 cup water (or follow your rice package for sushi rice)

Bring to a boil, then reduce to low and cook covered until water is absorbed

Remove from heat and let stand covered 10 minutes

Transfer rice to a non-metal bowl

Mix 3 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt until dissolved

Pour seasoning over warm rice

Gently fold with a spatula, using a cutting and turning motion

Fan or let cool to room temperature (or slightly warm)

Cover with a damp cloth while assembling sushi

Use rice at room temperature for best results
