Preheat oven to 400°F
Pat Cornish hens dry
Remove giblets if present
Season inside and outside with salt and pepper
Rub with butter or oil
Add herbs, garlic, lemon, or other desired seasonings
Place hens breast-side up in a roasting pan
Roast for 45 to 60 minutes
Baste once or twice if desired
Cook until internal temperature reaches 165°F in the thickest part of the thigh
Rest for 10 minutes before serving
