Wash the potatoes
Peel the potatoes if desired
Trim off any eyes or blemishes
Cut the potato lengthwise into even slices
Stack the slices and cut them into even strips
Turn the strips and cut across them into cubes
Keep the cubes as uniform as possible
Use immediately or place in water to prevent browning
