Harvest basil in the morning after dew dries
Choose healthy, unblemished leaves
Rinse gently if needed
Pat leaves completely dry
Remove stems and damaged leaves
Tie stems into small bundles
Hang bundles upside down in a warm, dry, dark, well-ventilated place
Or spread leaves in a single layer on a drying rack
Or use a dehydrator on low heat
Or dry in an oven on the lowest setting with the door slightly open
Check regularly until leaves are crisp and brittle
Crumble dried leaves if desired
Store in an airtight container
Keep container in a cool, dark place
