Wash beets thoroughly
Trim off the tops, leaving about 1 inch of stem
Leave the roots intact
Cook the beets until tender
Cool the beets completely
Peel off the skins
Slice, dice, or leave whole
Pack into freezer-safe containers or bags
Remove as much air as possible
Label with the date
Freeze immediately
