Pat the New York strip dry
Season generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat the grill to high heat
Clean and oil the grates
Place the steak on the hottest part of the grill
Grill for 3 to 5 minutes per side for medium-rare, depending on thickness
Flip only once
Move to cooler heat if flare-ups occur
Check doneness with a meat thermometer
Remove at 125 to 130 F for medium-rare
Remove at 135 to 140 F for medium
Rest the steak for 5 to 10 minutes
Slice against the grain
Serve immediately
