Choose healthy potatoes with several firm, visible eyes
Let the potatoes sit in a cool, bright place until the eyes sprout
Cut large potatoes into pieces with at least one or two eyes per piece
Allow cut pieces to dry for 1 to 2 days before planting
Prepare loose, well-drained soil in a sunny location
Plant each piece 3 to 4 inches deep with the eyes facing up
Space pieces about 12 inches apart in rows about 2 to 3 feet apart
Cover the planted pieces with soil
Water lightly after planting
Add more soil around the stems as plants grow
Keep the soil evenly moist but not soggy
Harvest when the tops yellow and die back
