Wait until the potato plants start to yellow and die back
Harvest new potatoes when plants are still green and flowering
Harvest maincrop potatoes about 2 to 3 weeks after the foliage has died back
Check that skins are set and do not rub off easily
Dig up a test plant to check tuber size
Harvest before the first hard frost
Harvest when soil is dry if possible
Lift potatoes carefully to avoid cutting or bruising them
Remove damaged or diseased tubers right away
Store only fully mature, unbroken potatoes
