Open the Gmail app on your iPhone
Tap your profile picture in the top right corner
Tap Manage accounts on this device
Tap Remove from this device
Confirm by tapping Remove
If you want to sign out of the Gmail website in Safari, open Gmail in the browser
Tap the menu icon or your profile picture
Tap Sign out
