Open the Gmail app on your iPhone
Tap your profile picture in the top right
Tap Manage accounts on this device
Tap Remove from this device
Confirm by tapping Remove
If needed, repeat for any other Gmail accounts
To fully sign out of the Google account in Safari, open the Google app or browser and sign out there separately
