Heat 1–2 tablespoons oil or butter in a pot
Add chopped onion, garlic, and ginger
Cook until softened
Add chopped vegetables like carrot, potato, beans, peas, corn, cabbage, and cauliflower
Stir for 2–3 minutes
Add salt, black pepper, and any spices you like
Pour in vegetable stock or water
Bring to a boil
Reduce heat and simmer until vegetables are tender
Add chopped tomatoes or tomato puree if desired
Adjust seasoning
Add fresh herbs like coriander or parsley
Serve hot
