2 cups beef drippings or beef broth
1 cup water
1 small shallot, finely minced
1 garlic clove, minced
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1 bay leaf
Salt, to taste
Black pepper, to taste
1 tablespoon butter, optional
Place the roasting pan over medium heat
Add shallot and garlic
Cook until softened, about 1 to 2 minutes
Pour in beef drippings or broth and water
Scrape up browned bits from the pan
Add Worcestershire sauce, soy sauce, thyme, and bay leaf
Simmer for 10 to 15 minutes
Strain the liquid into a saucepan
Season with salt and black pepper
Stir in butter, if using
Serve warm with prime rib
