Preheat oven to 425°F
Grease a baking sheet or line it with parchment paper
In a bowl, combine 2 cups pancake mix and 1/3 cup cold butter or shortening
Cut the butter or shortening into the mix until crumbly
Add 2/3 cup milk
Stir just until a soft dough forms
Add a little more milk if the dough is too dry
Turn the dough onto a lightly floured surface
Pat or roll the dough to about 1/2-inch thickness
Cut out biscuits with a biscuit cutter or glass
Place biscuits on the prepared baking sheet
Bake for 10 to 12 minutes
Remove when golden brown
Serve warm
