Mix flour, sugar, salt, cocoa powder, and cinnamon in a bowl
Cut in cold butter or lard until crumbly
Add egg, vinegar or wine, and enough liquid to form a dough
Knead until smooth
Wrap and rest the dough
Roll the dough thin
Cut into circles or ovals
Wrap each piece around a cannoli tube
Seal the edge with beaten egg or water
Heat oil in a deep pan
Fry the shells until golden and crisp
Remove and cool completely
Slide shells off the tubes
Mix ricotta, powdered sugar, vanilla, and optional chocolate chips or citrus zest
Chill the filling
Pipe the filling into the shells just before serving
Dip ends in chopped pistachios, chocolate chips, or candied fruit if desired
Dust with powdered sugar before serving
